The articular cartilage is composed mainly of water (75%), collagen type II (15%) and aggrecans (9%) such as hyaluronic acid and chondroitin. Type II collagen is the predominant form of collagen in the sternal cartilage and accounts for approximately 60% of the dry weight of the cartilage. Dietary supplements that contain collagen type II, hyaluronic acid, and chondroitin sulfate may be beneficial during aging and joint diseases. Collagen type II is extracted from the cartilage of chicken sternal cartilage.
